PAN DE COCO (Coconut Bread)

Ingredients:

  • 3 ¼ cups bread flour or all-purpose flour
  • 2 tbsp sugar
  • 1 cup lukewarm milk
  • 2 tsp active dry yeast
  • 1 pc egg (beaten)
  • ⅓ cup sugar
  • ½ tsp salt
  • ¼ cup vegetable oil (add more for kneading)
  • egg wash (1 pc beaten egg with 1 tsp water)

Filling (Option 1: Grated Coconut Filling)

  • ¼ cup butter
  • 2 cups grated coconut
  • ¾ cup brown sugar
  • 1 tsp vanilla extract

Filling (Option 2: Desiccated Coconut Filling)

  • ¼ cup butter
  • 2 cups desiccated coconut
  • ¾ cup brown sugar
  • ½ cup milk
  • 1 tbsp flour
  • 1 tsp vanilla extract

Procedures:

  • In a large bowl, combine milk, sugar and yeast. Mix to combine. Cover and allow to sit for 5-8 minutes or until the mixture becomes foamy.
  • Add beaten egg, sugar, salt and vegetable oil. Mix well.
  • Then, add flour. Mix well until it forms into a dough.
  • Transfer dough to a lightly greased kneading board.
  • Add some oil on the dough and on your hands to prevent the dough from sticking.
  • Knead the dough for 8-10 minutes or until it becomes smooth and elastic.
  • Put some oil in a bowl. Place the dough and cover with clean towel.
  • Allow to rise for 1 to 1 ½ hours or until it doubles in size.
  • After proofing for 1 ½ hours, gently punch the dough to remove some of the gas bubbles formed by the yeast during rising.
  • Roll the dough into a log. Cut into half. Roll the dough again and cut into pieces.
  • Form each piece into a ball.
  • Roll the other half of the dough and cut into pieces.
  • Flatten each piece. Add about 1 tablespoon of coconut filling.
  • Fold and pinch to seal the edges.
  • Arrange each filled dough on a greased tray.
  • Poke holes on top of each filled dough using a fork.
  • Brush the top with egg wash.
  • Cover with clean towel and let them rest for 30 minutes.
  • Bake in a preheated oven at 340 F / 170 C for 18 minutes until golden brown.

Pan de Coco Filling

Option 1: Grated Coconut Filling

  • In a pan, melt butter. Add grated coconut and brown sugar. Stir until combine.
  • Add vanilla extract. Stir continuously and cook over low heat until the sugar is completely dissolved.

Option 2: Desiccated Coconut Filling

  • In a pan, melt butter. Add desiccated coconut and brown sugar. Stir to combine.
  • Combine milk and flour. Stir continuously and cook over low heat until the sugar is completely dissolved.
  • Add vanilla extract.
