Alcapone Loaf Cake is inspired by J. Co’s Alcapone Donuts. It is soft and fluffy cake with white chocolate frosting and toasted almonds on top. Super yummy and super easy to make at home.


  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup sugar
  • 4 large egg yolks
  • ⅓ cup water
  • ¼ cup vegetable oil
  • 1 tsp vanilla extract
  • 4 egg whites
  • ½ tsp cream of tartar
  • ¼ cup white sugar

White Chocolate Frosting

  • ½ cup white chocolate (chopped)
  • ¾ cup whipping cream
  • 1 cup toasted almonds (add more if needed)

  • In a large bowl, sift and combine the dry ingredients: flour, baking powder, salt and sugar. Mix well until combined and set aside.
  • In a separate bowl, combine the wet ingredients: egg yolks, water, vegetable oil, and vanilla extract. Mix well.
  • Combine the wet and dry ingredients. Mix until well combined. Mix until smooth and no lumps. Set aside.
  • In a mixing bowl, beat egg whites until foamy.
  • Add cream of tartar and continue beating.
  • Gradually add sugar and beat until stiff peaks form.
  • Combine the batter and meringue.
  • Gently fold the meringue into the batter until combined.
  • Line the base of a loaf pan with parchment paper.
  • Pour and divide the batter.
  • Bake in a preheated oven at 170C for about 30 minutes or until the toothpick inserted in the center becomes clean.
  • Toast almonds at 180C for 5 minutes.
  • Unmold the cake. Remove the parchment paper.

White Chocolate Frosting

  • Microwave whipping cream for 60 seconds.
  • Add the chopped white chocolate. Mix until it melts.
  • Refrigerate for 30 minutes before whipping.
  • Whip until stiff peaks form.
  • Top the cake with frosting.
  • Press down the cake on toasted almonds.
