UBE CUSTARD MAMON

Ube Custard Mamon is an easy to make dessert recipe. It is a combination of our two favorite Filipino food which is leche flan and ube mamon. Perfect for snack or merienda. Also, perfect for business idea.

Ingredients:

CUSTARD

  • 2 tsp sugar
  • 4 pcs large eggs
  • 1 cup condensed milk
  • ¾ cup evaporated milk
  • 1 tsp vanilla extract

UBE MAMON

  • 4 egg yolks
  • ¼ cup veg oil
  • ¾ cup milk
  • 1 ½ cups cake flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • ½ cup white sugar
  • 1 tbsp ube flavor
  • 4 egg whites
  • ½ tsp cream of tartar
  • ¼ cup white sugar

Ube Custard Mamon

Procedure:

  1. Put 2 teaspoon sugar in a mamon molder. Caramelized sugar over low heat. Then, set aside.
  2. For the custard: In a bowl, combine eggs, condensed milk, evaporated milk and vanilla extract. Mix until well combined. Strain mixture 3 times.
  3. Fill in about 1/4 cup custard mixture in each molder. Set aside.
  4. For the mamon: In a bowl, sift together the cake flour, baking powder and salt. Mix well. Set aside. In another bowl, combine egg yolks and sugar. Whisk until light in color. Add in oil, milk and ube flavor. Mix until combined. Combine the wet and dry mixtures. Mix until well combined. Do not overmix! Beat egg whites until foamy. Add cream of tartar. Gradually add the sugar. Beat on high speed until stiff. Fold the meringue into the batter. Fill about 2/3 cup batter in each mold. Tap to remove bubbles. Pour boiling water into the pan. Enough to reach the custard level. Bake in a preheated oven at 160 C on a bain-marie for about 40 minutes or until the toothpick inserted in the center becomes clean. Set aside to cool. Put in the refrigerator to set for a few hours until the custard are just set. Serve chilled.
